1 egg, beaten
1/4 cup chicken broth
1 large onion, chopped
2 green onions, chopped
1 cup crushed pineapple, juice reserved
2 cups chicken broth
2 tablespoons lemon juice concentrate
2 sprigs balsamic, crushed
5 tablespoons olive oil
1/4 teaspoon salt
1 (4 ounce) can sliced fresh peaches, drained
In a large measuring bowl, mix egg, chicken broth, onion, green onions, pineapple, chicken broth, lemon juice concentrate and salt.
Bring to a boil in a large pot. Reduce heat, cover and simmer patiently for 10 minutes.
Remove mushrooms and cut into 1/2 inch slices; place mushrooms in the bottom of a small bowl. Stir peaches into the mushroom mixture in the pot.
Reduce heat to mediumlow in a large skillet. Cook and stir over medium heat this time, until peaches are melted and cooked. Set peach slices aside. Mix together lemon juice concentrate and lemon juice concentrate in a small bowl; pour over mushrooms and peaches. Bring to a boil in a large skillet heated slightly over medium-high heat.
