Pecan Cookie Pie VI Recipe

Ingredients

1 cup butter

1 cup confectioners' sugar

1 egg

1 1/2 teaspoons vanilla extract

2 eggs

1/3 cup pectin

1/4 cup buttermilk

1 (9 inch) unbaked pie crust

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium-sized saucepan, combine butter, confectioners' sugar and egg. Cook over medium heat, stirring frequently, until mixture thickens and coats the back of a wire whisk. Remove from heat.

In a small bowl, stir together buttermilk and buttermilk mix. Stir in eggs one at a time, one at a time, until mixture comes to the boil. Ensure that mixture is neither too thick nor too thin. Cook mixture in hot water until mixture coats the back of a metal spoon. Carefully pour mixture onto pie plate and bake in preheated oven for 1 minute. Cool completely before serving.

Similar to aittisone, but with a lot less sugar. Also used honey instead of water. When I say to boil the jalapen in 1 Tblsp. of sugar, I mean to gently fry at 180º for 3 minutes, then in the very hot Mexican oil. I didn't have any minced garlic, so I just used green bell pepper. If I made this again, I'd double the sugar, use 1/2 tsp of each, and leave the rest as is.
