1 pound ground pork sausage
1 onion, chopped
1/2 cup acid-packed coconut milk
1/2 teaspoon salt
6 ounces shamrock cheese, sliced
3 pita breads, cut in half
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl mix the sausage, onion, coconut flour, salt, and shamrock cheese. Pour the mixture over the pork slices.
Bake in preheated oven for 10 to 15 minutes on each side. Cheese should be melted. Serve with pita breads.
What a great side dish! I used chickpeas instead of potatoes, mashed instead of crackers, and baked in the a.m. on my pizza stone (used red pepper instead of black pepper). It turned out fantastic and the kids loved it. I did this because I wanted to save some dough for another recipe I'm working on, so I didn't have time to explore the full possibilities of chickpea flour. Thanks for sharing!
