1/2 cup white sugar
1 teaspoon packed brown sugar
1/2 teaspoon salt
2 egg yolks
1 cup milk
1/2 cup pumpkin puree
3/4 cup butter
1 tablespoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 tablespoon butter, softened
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Spray a large baking sheet with nonstick spray.
In a small bowl, mix 1/2 cup sugar and brown sugar. Pour the mixture into the baking sheet.
In a medium bowl, mix egg yolks. Beat egg yolks, pumpkin puree, 1/2 cup butter, and 1 tablespoon vanilla extract. Mix 1/2 cup flour and baking powder into butter mixture; stir into pumpkin mixture. Stir in flour mixture, butter mixture, and vanilla extract. Pour batter into prepared pan.
Bake in preheated oven for 50 minutes, or until golden brown. Cool, and refrigerate. Serve warm or at room temperature.
