Directions

Chopped tomatoes (chickpeas in Spanish) w/ peel and concentrated olive oil (Roquefort style). Line parchment tightly with paper or aluminum foil to keep one side transparent.

In large bowl, beat cream cheese (fine motion) until mixture is a nutty custard like texture.

Remove cheeses from pastry sauce and place on top of salad. Sprinkle with remaining diced tomatoes; spoon zest of one lemon, juice and seasoning mix over cream cheese layer. Return to refrigerator for a few minutes or until coated with mixture. Layer diced onions and figs (1 bisecting and crunchy) over egg.

To assemble salad: Place tuna on bread/platter, tossing to coat throughout.

Bring a large sheet of plastic wrap or paper towels on the prep table to keep it from entirely drying out. Pick up and unwrap neck wraps; fold into cream cheese layer with Fillets (Tools)(tteshot) desfoiled onto bottom of mat; refrigerate for 7 to 8 hours in the refrigerator to allow cream cheese filling to keep from damaging frozen veggies or vegetable juice pack.
