1 1/2 cups chopped celery
1 cup butter, softened
1/2 cup packed light brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 teaspoons lemon zest
1 (7 ounce) can crushed pineapple with juice
1 cup chopped bananas
1/2 cup chopped walnuts
1/2 cup chopped dates
1/2 cup chopped pecans
1/2 cup loaded dry bread crumbs
1/2 cup packed light brown sugar
1/2 teaspoon salt
1 dash ground black pepper
In a medium bowl, mix the celery, butter, brown sugar, egg, vanilla extract, lemon zest and 1 (7 ounce) can crushed pineapple with juice. Mix the bananas, pecans, dates and pecans into the pineapple mixture.
Preheat the oven to 375 degrees F (190 degrees C).
Pour the pineapple mixture into a 9x13 inch baking dish. Bake in the preheated oven for 15 minutes.
When the pie is cool, cut into squares. Serve warm.
