1 tablespoon butter or margarine
1 pound sliced crackers
2 tablespoons all-purpose flour
3/4 cup finely chopped roasted Hungarian green pepper
3 eggs, beaten
2 tablespoons grill seasoning
Sift butter or margarine into a medium bowl. Stir in crackers. Sprinkle flour over cracker mixture. Cover and refrigerate.
Preheat oven to 350 degrees F (175 degrees C).
Place sliced crackers evenly on an ungreased cookie sheet. In a small bowl, beat egg and flour until smooth. Place egg mixture on bottom of cookie sheet. Cover and refrigerate overnight.
The following morning, preheat the oven for 400 degrees F (200 degrees C).
Fry cracker halves, removing skins with a slotted spoon, in preheated oven for about 15 minutes to 4 minutes per side, until lightly browned. Place 1/4 teaspoon of egg mixture in center of each cookie, roll up slightly and roll completely open. Serve warm.
