Mexican Rice Recipe

Ingredients

1 cup water

2 cups uncooked white rice

1 (14 ounce) can black beans

1 green bell pepper, seeded and diced

1 orange bell pepper, seeded and diced

1 (3 ounce) can diced green chilies

1 (3.5 ounce) package instant road taco seasoning mix

1 package (12) flour tortillas

Directions

In a medium saucepan, bring water to a boil. Add rice, cover, reduce heat, and simmer for 15 minutes. Add beans, peppers and chilies and simmer for 5 minutes.

In a large pot, bring broth to a boil. Add rice, cover, reduce heat, and simmer for 5 minutes. Stir in taco seasoning.

Pour water mixture into a large bowl, and add remaining ingredients. Mix well, cover, and simmer for 20 minutes. Serve hot or cold.

Though this takes several steps, the results are well worth it. I tried several substitutions, but All I could think of was wheat whiskey. So I ended up using 2 ounces of Harvey's Dark Rum, which is so new and wonderful. It is so smooth and has such a beautiful rum taste. It does not require topping, and I was able toobo to it in the microwave before dipping. Lots of fun and very simple.
