Chocolate Covered Carrot Cake II Recipe

Ingredients

1 1/2 cups all-purpose flour

1 1/2 cups white sugar

2 eggs

1 teaspoon vanilla extract

1 cup corn syrup

2 teaspoons baking powder

1 teaspoon baking soda

1 cup vegetable oil

1 pint carrot juice

1 pint chocolate syrup

10 graham crackers

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray an 8 inch square pan with nonstick cooking spray.

In a large bowl, mix flour, sugar, eggs, and vanilla until well blended. Beat in corn syrup and baking powder until well mixed. Stir in vegetable oil. Beat in carrot juice, carrot, chocolate syrup and graham cracker chips. Pour batter into prepared pan.

Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean.

I really like this recipe. I butterflied my chicken and seved it on the grill. Had some Brie and I zested a few dashes. Will try with the foie gras.
