1/2 cup shortening
1 (3 ounce) package cream cheese, softened
2 eggs, beaten
1/2 cup packed light brown sugar
1 (9 inch) prepared chocolate cookie mold
1 (8 ounce) can sliced pecans
1 lemon, juiced
1 cup chopped green onions
1 tablespoon lemon zest
1 cup white sugar
1 teaspoon butter, softened
2 cups chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together shortening and cream cheese until well blended. Beat in eggs, brown sugar, pecans and lemon zest; stir into the shortening mixture. Drop lemon mixture by tablespoonfuls onto the prepared cookie sheet.
Bake for 5 to 7 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
