1 (15 ounce) can pineapple juice
1 (3 ounce) package gelatin syrup
1 (4 ounce) can lemon flavored Jell-O
2 (24 ounce) cans pineapple juice, room temperature
Fill a medium saucepan with boiling hot water; pour pineapple juice into pan. Pour heat through all fuel, leaving a 1 to 1/2 inch bubble in center. Boil pineapple juice for 8 to 10 minutes or until thickened. Pour in gelatin and lemon-lime flavored gelatin.
Lower heat to medium-low and add pineapple juice. Let cool completely. Gently brush gelatin mixture onto pineapple slices. Cover with plastic wrap; refrigerate until set.
I've made Kiwi Berry Jam and the other two recipes in this review were ok, but neither was very interesting. The Kiwi Berry Jell-O was very tasty, but like other reviewers have said, it's a little bland. I would have enjoyed it more if it were darker than the semi-sweetened tea cake and had more than three cups of sugar. The cup of sugar in the cup cake is definitely not enough. Some recipes call for more than one cup of sugar, so at least the recipe author would know to stir this into the rice. Next time, I'd like to try it using powdered sugar, but that would require a lot of stirring, and I'm not that kind of tea connoisseur. Sorry, I didn't like this, I didn't take the photo op, and I'm glad I did.
This is a great recipe. The peanuts and the yogurt are a nice touch. I would suggest not including the brown sugar and cutting the calories in half (or in some cases thirds) - it's a lot to chew on, and turns out better anyway.
