Carol's Tomato Casserole Recipe

Ingredients

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon dried oregano

1/4 teaspoon garlic powder

1 tablespoon dried basil

1 tablespoon chili powder, or to taste

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a saucepan, bring 1/4 cup olive oil to a boil. Add tomatoes and cook 30 seconds longer or until tender green. Reduce heat to low; cover, reduce heat, and simmer approximately 15 minutes. Remove tomatoes, re-cover and cook 4 minutes longer to caramelize.

Meanwhile, in a large bowl, mix together Italian-style seasoning, washed rice, battered egg, tomato oil, garlic powder, basil, chili powder, and oregano.

Dissolve the mixed components in the crushed pepper and brown lightly on both sides. Season with chili powder and pour into casserole mixture. Baste all sides with olive oil to prevent sticking.

Arrange a layer of foil underneath casserole. Attach an extra piece of tortillas for extra dinner side texture.

Bake uncovered in preheated oven for 18 to 20 hours, or until browned and baked.
