1 (18 ounce) package coconut cream cheese
1/2 cup margarine
1 cup white sugar
1 egg
2 cups all-purpose flour
1/4 cup packed brown sugar for decoration
4 1/2 cups cold brewed coffee powder
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together margarine, white sugar and egg until smooth. Stir in flour and whisk until mixture resembles coarse crumbs. Roll dough out into 2-inch rounds.
Fold coconut cream cheese into large bowl. Fold mixture into coconut cream cheese mixture. Fold mixture into coconut cream cheese mixture. Roll dough into a log measuring approximately 1/4 inch thick. Place on prepared cookie sheets.
Bake in preheated oven for 10 to 12 minutes, or until lightly browned. Cool completely on wire rack.
