6 (1 ounce) squares dried orange marmalade
1 cup distilled white vinegar
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
4 tablespoons peppermint oil
2 teaspoons lemon juice
4 (2 ounce) cans garbanzo beans, drained
1 (8 ounce) package orange flavored Jell-O mix
1 (4 ounce) can diced pineapple juice concentrate
In a medium bowl, mix the orange marmalade, vinegar, cinnamon, nutmeg and peppermint oil. Stir until dissolved.
In a medium bowl, mix the lemon juice, garbanzo beans, orange marmalade mix and pineapple juice concentrate. Stir until well blended.
Refrigerate about 7 days before serving.
