3 tablespoons unsalted butter
1 teaspoon lemon juice
1 tablespoon sugar
1 pound lean beef sliced
4 eggs
6 slices white bread, cubed
1 teaspoon orange zest, frozen
1 teaspoon grated lemon zest
salt to taste

In large microwave-safe bowl, heat butter or margarine over medium heat. Add lemon juice and sugar and stir gently. Let stand for few minutes to allow a glaze to spread (use a wooden spoon to avoid burning).
Melt butter in medium, heavy-based skillet over medium heat. Add beef, egg, bread cubes and orange zest; cook over medium high heat, stirring constantly, for 1 minute. Reduce heat to low and stir in lemon zest, lemon zest, salt, lemon juice and sugar. Heat to medium-low, stirring occasionally, until mixture coats the back of a metal spoon.
Stir in rendered beef and orange zest. Stir in lemon zest and salt. Place meat in pan, stirring constantly, and pour sauce over meat. Refrigerate for at least 1 hour. Cover and refrigerate overnight.
When ready to serve, spoon sauce into a medium bowl. Sprinkle bread cubes in center and your favorite gelatin over meat. Cover and refrigerate. Serve immediately.
