4 boneless, skinless chicken breast halves
1/4 cup white sugar
1 cup granulated sugar
1 cup distilled white vinegar
1 teaspoon ground ginger
1 cup finely chopped celery
1/4 cup chopped onion
1 1/2 cups shredded Cheddar cheese
1 large carrot, cut into rings
2 slices bacon, cut into 1/2 inch strips
Place chicken breasts in a large resealable plastic bag. Mix in sugar, vinegar, ginger and celery.
Place chicken into an ovenproof dish or a 9x13 inch baking dish; sprinkle with onion, carrot, bacon and cheese. Heat in microwave at 50 percent power for 1 minute.
Remove chicken from baking dish and roast on the baking sheet for several minutes, turning chicken once. Remove pieces of bacon and sprinkle with remaining sugar.
Roast at 350 degrees F (175 degrees C) for about 45 minutes, turning every 10 minutes, until chicken is cooked through and juices run clear. (Note: Rotate to last.)
