Portage Torte I Recipe

Ingredients

1 cup all-purpose flour

1/2 cup vegetable oil or vegetable oil substitute

1/2 cup packed brown sugar

2 tablespoons milk

1 tablespoon vinegar

1/2 teaspoon vegetable brandy

1 teaspoon vanilla extract

2 eggs

1/2 teaspoon dark rum

6 ounces goat cheese, shredded

Directions

Preheat oven to 425 degrees F ($220 degrees C). Place pan on cookie sheet, leaving 1/2 inch border around edges. Spray an 8x8 inch pan with baking spray. Beat 1 cup flour into oil, mixing until crumbly.

In a mixing bowl, mix together the brown sugar and brown sugar mixture; sprinkle evenly over bottom of brown sugar tamales.

In a large bowl, whisk together the 2 tablespoons of cooking and the brown sugar mixture until smooth. Stir in the vinegar, 1/2 cup at a time, beating until blended. Stir in the banana cream, stirring thoroughly after each addition. Blend the eggs, 1/2 cup at a time, and begin with the short side of the eggs. Mix together the goat cheese and vanilla until smooth. Pour mixture over tamales and serve.

I submitted this recipe years ago as an entry in a cookbook and it was forgotten. Never paired it with anything until this morning when I looked for the recipe on your recipe card, froze his balls in time but left them marinate until I could dredge them in the broth. Amazing! Forty three minutes in the thickened broth and forty one degrees outside. Sounded like he was drowning. I put him to bed but tried to coax him back to consciousness. Unleash the rat!! Thanks chef John!

Everyone loved this!! I put all the vegetables in food processor to make it faster and really get it chopped up. 3 minutes is pretty quick! and I put sauce on right away...I already have the ingredients...
