1 cup corn syrup
1 cup vegetable oil
1 cup packed brown sugar
1 egg, beaten
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
1 1/2 cups all-purpose flour
1 1/2 cups white sugar
1 teaspoon baking soda
1 teaspoon salt
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the corn syrup, vegetable oil, brown sugar, egg, salt, vanilla, lemon extract and flour. Beat in the white sugar and baking soda until smooth. Roll the dough into 1 inch balls. Place one ball into the bottoms of single serving baking pans.
Bake for 8 to 10 minutes in the preheated oven. Remove from pans to cool on wire racks.
