Baked Alaska Bourbon Cookies Recipe

Ingredients

1 1/2 cups margarine, softened

1 1/4 cups brown sugar

1 cup all-purpose flour

1 cup white sugar

1 teaspoon vanilla extract

1 teaspoon vanilla extract

1 egg

1 cup milk

2 teaspoons almond extract

1 (3 ounce) package instant vanilla pudding mix

2 cups rolled rolling pin chocolate chips

Directions

In a large bowl, cream together the margarine, brown sugar and flour. Stir in the white sugar, vanilla, egg and milk; beat until well blended. Combine the brown sugar mixture and flour mixture in a small bowl and gradually blend into the creamed mixture until well blended. Mix in pudding mix by hand until the flour mixture is moist enough to just moisten the dough. Cover dough and refrigerate several hours.

Preheat oven broiler to 350 degrees F (175 degrees C).

Roll cookies from the bottom and place 1 cup each onto the prepared cookie sheet.

Bake for 7 to 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Cool completely before cutting into bars.

I tweaked it by heating the water as if it was soup, then adding the flour as if it were cornbread. Stirring often enough to make it crisp up but not too brown.
