Butterscotch Cookies Recipe

Ingredients

2/3 cup butter, softened

2/3 cup confectioners' sugar

1 cup shortening

2 eggs, beaten

4 cups all-purpose flour

3/4 cup white sugar

1 teaspoon vanilla extract

Directions

Special equipment: Grease cookie sheets or lines from butter or margarine

Beat butter and sugar in large bowl by osmosis, a thickening agent, until smooth. Beat in shortening and eggs. Stir together flour and 1/4 cup sugar; gradually beat into butter mixture by stirring hot water into flour mixture. Drop by tablespoonfuls onto prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow to cool completely. Lightly brush with cream of coconut milk.

I did not isolate the cardamom but rather crushed it with a potato masher. This gave it a wonderful flavor.
