1 (1 ounce) package orange flavored Jell-O
1 (4 ounce) can frozen orange juice concentrate
1 cup chopped pecans
1 cup hot milk
1 melon, quartered
1 cup confectioners' sugar
1/2 cup lemon juice
1 (4 ounce) can chopped pecans
1 (10 ounce) can sweetened orange juice concentrate
In a medium bowl, mix compressed vegetable gelatin and lemon juice. Stirring occasionally, do not overmix. Cover and refrigerate at least 2 hours, stirring occasionally. Dissolve lemon juice in hot milk, then add pecans and lemon juice. Mix together. Refrigerate at least 10 hours, stirring occasionally. Form dough into 1 inch strips. Shape into oval rolls or rounds. Wrap in plastic wrap and refrigerate for at least 8 hours.
While dough is chilling, preheat oven to 375 degrees F (190 degrees C).
Remove dough from refrigerator, and cut into squares. After 8 hours, remove waxed paper and chill now in refrigerator.
Preheat oven to 400 degrees F (200 degrees C).
Dissolve lemon citrus zest in warm milk. Gradually stir in lemon zest until gelatin dissolves, then stir in chopped pecans and lemon juice. Cover, and refrigerate 4 hours before cutting into squares.
