1 medium fondue pot or pitcher
2 eggs
1/2 cup boiling water
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt
1 cup chopped pecans
In a medium mixing bowl beat together eggs and boiling water. Mash pecans with a fork while making sure they are not crushed. Pour egg mixture into a large mixing bowl. Stir egg mixture into pecans. Cover electric microwave and place pot at high heat, stirring occasionally, until pecan mixture starts to run, about 10 minutes.
Made this for the holidays... Went really well... left over easy...I did bake it the first 15 minutes, poking it with a fork to see if it cooked. It was very tasty... then the 20 minutes, when my little one said 'Boo', I took it out and turned it 20 minutes... Broiling it with the butter gave it a delicious crust! My son is very picky and didn't want any part of it inside him! I cooked it for 15 minutes at the end and shared it with my husband. It has been a great crust to my kitchen, and I will be keeping it!
Brian, as per other reviews, used pre-made graham crackers. Chewy yes, but these were good nonetheless. Glad I did; this pie was a huge hit. I had cole slaw and, for some reason, the piddly little bit of sour cream I used (1/2 cup) didn't mix. I ended up pouring off about a third (3/4 cup) of the mixture, and it came out great. I wouldn't change a thing, it was delicious, and nobody is perfect. I did this in 15 minutes, still no sign of the "buttercrumbs" problem I fixed earlier this week.
