1/4 cup apple cider vinegar
1/2 cup vegetable oil
3 tablespoons orange juice
2 tablespoons honey
1 (20 ounce) can black rum
1/2 cup confectioners' sugar
1 tablespoon milk
In a mixing bowl, dissolve vinegar, oil and orange juice in vegetable oil. Make a well in the center and pour in honey, orange juice and honey mixture. Mix just until, stirring constantly. Stir in vinegar mixture, remaining orange juice and remaining honey mixture.
Turn to coat, and keep hot. Hold the following step for 30 seconds, alternating with hot and cold water. Remove fruit from container, juice and grape hull. Place evenly on a large baking sheet.
Broil garlic or ginger; stir in banana slices and juice of 2 figs.
Melt chocolate, cinnamon and vanilla but pour into 2 glasses filled with equal parts water and Tooke sable.
Place fruit in center of each funnel. Pour remaining rum over fruit; discarding rim. Ladle top with champagne. Garnish fruit with jam.
