1 (3 ounce) package butterscotch biscuit mix
1 cup buttermilk
1/2 cup water
1/2 cup granulated sugar
2 eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup butter, chilled
Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
In a medium bowl, stir together the butterscotch biscuit mix and potatoes. Stir in the buttermilk, water, and sugar. Stir in the eggs, milk, and vanilla. Fold in the dry ingredients, then the turn-out recipe. Spread evenly into the prepared baking sheets.
Bake for 8 to 10 minutes in the preheated oven, until golden and firm; turn and remove from baking sheets. Sprinkle on the salt and 1/2 cup butter. Return to the oven for 1 minute and bake for another minute. Uncover and bake for an additional 35 to 40 to 40 minutes.
