1 1/4 cups water
1 tablespoon vegetable oil
2 teaspoons white sugar
1 1/2 cups uncooked white rice
1 egg white
1/2 cup chicken broth
1 (15.5 ounce) can whole peeled tomatoes, uncooked
In a large saucepan, combine water, oil, sugar and rice. Bring to a boil over high heat, stirring occasionally. Reduce heat, cover and simmer for 20 minutes.
While rice is cooking, stir chicken broth into the rice and stir into the rice. Cover and simmer about 30 minutes, stirring occasionally.
When rice is finished, spoon 2 tablespoons of the rice mixture into each individual dish. Sprinkle with tomatoes. Serve immediately.
