1 small ham lean
1 large onion, thinly sliced
2 bay leaves
1 tablespoon horseradish
2 teaspoons shallot powder
2 teaspoons ground black pepper

Place ham and onion in a large, heavy pan. Sprinkle with balsamic vinegar, and place pan over medium heat. Stir in the horseradish, shallot, and pepper; reduce heat.
Stir pan mixture into each steak filet, ensuring that everything is coated thoroughly. Cover with aluminum foil, and secure with toothpicks. Cook at 375 degrees for about 30 minutes.
Remove foil that has been rubbing evenly. To still meat juices, stir in almond extract. Let steaks stand in a warm oven, covered, about 20 minutes. Serve steaks at room temperature for about 10 minutes per side, seasoning as desired.
