1 (1 pound) loaf sweet Italian sausage
1 (4 ounce) can sliced ham, drained
1 cup frozen chopped spinach
1 cup diced celery
1 (1 pound) can diced celery and onion
1 (8 ounce) can sweet pickle relish
1 (6 ounce) can frozen orange juice concentrate, thawed
Preheat oven to 350 degrees F (175 degrees C). Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain grease from skillet. Add sausage, ham, spinach and celery. Stir together and cook for 8 to 10 minutes, or until sausage is evenly brown. Drain grease and place into a medium bowl.
Arrange peas in a single layer on a medium baking sheet.
Stir crushed pineapple and lima beans into sausage mixture. Folde into sausage mixture. Spoon mixture into prepared baking dish.
Cover and refrigerate overnight, and serve between sheets of waxed paper to help marinate.
