1 (8 ounce) package cream cheese, softened
1 (10 ounce) package frozen chopped spinach, thawed
2 cups shredded Cheddar cheese
1/2 pound bacon, diced
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
In a medium bowl, mix together cream cheese, spinach, Cheddar cheese and bacon.
In a medium bowl, mix together onion, garlic and oregano.
Spread cream cheese mixture over entire fruit. Sprinkle makings over fruit, leaving a 1/2 inch channel in center of each fruit. Chill in refrigerator until serving time.
It was delicious, but I had to use 2 lbs of small blue potatoes because there's just not much there to eat with all the almonds. Besides, using small potatoes makes the dish watery, so I'd recommend using a larger baking dish. It still tasted good, just not as tasty as I had hoped.
