4 eggs, beaten
1 tablespoon all-purpose flour
2 tablespoons boiling water
2 tablespoons unsalted butter
2 tablespoons brown sugar
1 (22 ounce) can sliced peaches - drained, pitted and sliced
In a medium bowl mix together eggs, flour and boiling water. In a separate bowl beat butter and brown sugar until smooth.
Roll each cookie into 8 slices
Place on cookie sheets; flatten slightly using a pastry bag or measuring cup
Roll vents to allow steam to escape at bottom of sausage roll
Place roll onto short crust baking tray. Brush tops with egg mixture.
Place blackened potato chips covering the sausage roll and cookie sheets (10 to 12 inches apart) around the edges.
Bake in preheated oven until lightly golden brown, about 20 minutes. Cool on wire rack. Cut into approximately 10 pieces and place on their own plates.
