1 cup chopped celery
1/4 cup chopped onion
2 tablespoons cider vinegar
1/4 cup chopped green bell pepper
salt and pepper to taste
1 (16 ounce) can sliced fresh mushrooms, drained
1 tablespoon chopped fresh parsley
1 (8 ounce) package cream cheese, softened
2 cups milk
1 large vanilla bean, crushed
In a medium bowl, toss together celery, onion, vinegar, green pepper, salt and pepper. Mix until well blended, then spread dressing over the mixture. Cover and refrigerate at least 1 hour before serving.
