2 cups butter
1/2 cup white sugar
1 teaspoon vanilla extract
1 (8 ounce) package cream cheese
1 1/2 cups milk
6 egg whites
4 slices lemon, garnish
12 triple lemons, garnish
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) pans.
In a large bowl, cream together butter, sugar, vanilla extract, cream cheese and milk. Beat in egg whites and lemon peel. Pour mixture into pans.
Bake in preheated oven for 150 minutes, or until cheesecake springs back when touched. Allow to cool, then refrigerate at least one hour to chill.
Make lemon cheesecake filling: In a large bowl, beat cream cheese, milk, egg whites and lemon peel until smooth. Beat cream cheese mixture into lemon cheesecake filling.
