1 tablespoon olive oil
2 cloves garlic, peeled and cubed
1 1/2 cups beef broth
1 (8 ounce) can diced orange mushrooms, drained
1 (10 ounce) can salsa
2 tablespoons chopped fresh cilantro
1/4 teaspoon salt
3 (10 ounce) cans diced tomatoes
12 ounces shredded Cheddar cheese
Melt the olive oil in a small saucepan. Place garlic into saucepan with enough heat to kinda bubble. Cover and simmer for an additional 2 minutes, stirring occasionally.
In a large bowl combine beef broth, mushrooms, salsa, cheese and orange mushrooms. Mix gently and serve.
