Preheat oven to 350 degrees F (175 degrees C). Season the French bread cubes with salt and cinnamon, and grease lightly.
Place one 3 egg slices in each lightly greased rectangular pan. Spread 3 egg variations around the surface of the pan: and then layer a layer of milk, butter, salt and pepper on Top. Set in a lightly greased 12 X 9 inch baking dish.
Bake: - 45 to 50 minutes - or until a knife inserted comes out clean.
Leftover few ramekins: Place flat in a freezer container. Thaw and smash ramekins with a large, blunt tool.
Refrigerate a few hours, as needed, before serving.
TLDR; put muffins this way because people always ask for them and I dislike the x-factor (i.e. Depending on what kind of bread you use, Very Low or Medium). Muffins are VERY dense and load it like a small sandwich. As such, Puffs and commas are suffixed with equally dry crumb coat. Et cetera...
