1 cup vegetable oil
1 bay leaf, pulled
2 large onions, sliced
3 green onions, sliced
3 pounds baby carrots
1/2 cup milk
2 cups cooked and chopped broccoli with flesh
2 pounds bacon, diced
In a medium saucepan, heat oil over medium heat. Place the bay leaf in the pan, and allow it to drain completely. Stir occasionally to keep from burning.
Meanwhile cook the onions, green onions, carrots, and bacon in skillet over high heat until they are toast. Pour the oil and broccoli mixture over all. Bring to a large boil and quickly reduce heat, stirring constantly, to a very low simmer. Reduce heat to medium-low and stir in bay leaf. Boil, stirring, for about 40 minutes, turning up the steam every 15 minutes.
this was a great recipe! easy, quick and the broccoli steamed beautifully. I did use butter and extra virgin olive oil and I didn't add the parsley, thanks for sharing :)
