2 1/2 cups butter or margarine, melted
1 3/4 cups white sugar
1 (15 ounce) can coffee flavored Jell-O mix
2 cups boiling water
1 teaspoon vanilla extract
2 cups Jell-O
1 cup JELL-O
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, melt butter or margarine. Stir in sugar. Mix boiling water into butter mixture; stir in vanilla. Stir in gelatin.
Fill cookie sheets with butter mixture and gelatin mixture. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.
Remove glass of Jell-O mixture with a 9 inch glass strainer. Place a piece of foil over glass ring and gently dunk gelatin mixture into melted butter mixture. Place foil to prevent spilling. Place cookies over jelly-filled cookie sheets.
Bake cookies for 20 to 25 minutes in the preheated oven. Allow to cool completely on wire rack. Cookies will brown slightly.
