1 (9 inch) prepared graham cracker crust
1 (4 ounce) can sliced peaches with juice
1 teaspoon orange juice
2 cups white sugar
2 cups evaporated milk
3 cups cornstarch
3 teaspoons lemon juice
2 teaspoons lemon zest
2 cups chopped pecans
1 teaspoon lemon zest
2 teaspoons orange zest (optional)
2 orange juice jell-ins
In a large bowl, combine peach slices, peaches, orange juice, sugar, evaporated milk, cornstarch, lemon juice and lemon zest. Mix well.
Line a 2 quart casserole dish with pea sized sheets. In a small bowl, mix pecans, lemon zest and orange zest. Spread mixture over pea sized sheets. Drizzle peach mixture over pea mixture and sprinkle with orange zest. Chill overnight before serving.
