3 cups chopped peaches
1 3/4 cups mayonnaise
1 1/2 teaspoons active dry yeast
1 cup warm water (120 degrees F/70 degrees C)
3 teaspoons lemon juice
1 teaspoon lemon zest
1 cup white sugar
3 tablespoons all-purpose flour
1 1/2 teaspoons grated lemon zest
1/4 teaspoon salt
1 pinch ground nutmeg
1 tablespoon margarine, melted
1/2 cup margarine, melted
1 egg, beaten
1 tablespoon lemon juice
1 teaspoon vanilla extract
In a large bowl, toss peaches with lemon juice, lemon zest, sugar and flour. Stir until blended. Divide peach mixture into six 6- in. wedges. Place in prepared pan.
Heat 1 teaspoon margarine in a medium bowl. Add remaining ingredients. Stir gently for 5 minutes about 3 minutes. Place pan on broiler rack.
Broil about 1 minute, until brown. Cool completely.
