Coconut Ricotta Cheese Recipe

Ingredients

1/2 cup butter, softened

1 egg

1 1/2 cups milk

1/8 cup white sugar

1/8 teaspoon salt

1 teaspoon vanilla extract

6/8 cup flaked coconut

1/2 green bell pepper, chopped

1/8 cup chopped almonds

1/4 cup chopped walnuts

Directions

Beat butter, egg, milk and sugar in small bowl until well blended. Stir into flour mixture; gradually blend in milk and sugar. Fold in salt, vanilla, coconut and chopped coconut.

Shape dough into oval loaves; place on ungreased baking sheet. Bake in preheated oven for 10 to 12 minutes or until toothpick inserted in center of loaf comes out clean. Cool slightly, remove from baking sheet and chill 8 to 10 hours.

Cool in refrigerator; use in food processor or blender; cover. Shape into 2 or 3 loaves. Reserve 1/4 cup for personal use.
