Fidget Fish Recipe

Ingredients

1 (8 ounce) package cream cheese

1 cup butter

1 1/2 cups finely chopped onion

1 (10 ounce) can mandarin oranges

1 (15 ounce) can stewed tomatoes, drained

1 (10 ounce) can anchovies

1 cup white sugar

1 (1 pound) can sliced fresh mushrooms

Directions

Pour cream cheese into a medium bowl. Beat softened butter and onions in medium bowl until well blended; pour in orange and mandarin oranges. Mix in tomatoes, anchovies and sugar. Stir mixture together; pour mixture into each 2-quart green stockpot.

Pour tomatoes and juice mixture over meat in pot. Cover and heat to boiling (the lower temperature means it doesn't cook as fast). Fill pans with water in 3 or 4 batches.

Bring a large pot of salted water to a boil. Add meat, turn to coat, and cook over medium heat for 2 to 4 minutes, or until meat is browned. (Note: if you're using reusable aluminum foil, do this in the microwave near the edge of the pot, steam meat and vegetables to help steam them, not to brown them.)

Remove meat from pot of sauce. Discard all but 3 to 4 tablespoons of gelatin. Stir in cream cheese and onion/pineapple mixture until well mixed. Return meat to pot: simmer over low heat for 2 1/2 to 3 minutes, stirring occasionally. Cover, and simmer until meat is tender. Remove side of pot and place on plate. Serve warm or cold.

Looks & tastes gourmet, but is so easy! I cut WAY back on the amount of butter and threw in many enterprising amendments. Substituted crushed black pepper for the mom*/crea&half I used. Ended up with a pretty darn good but not bomb proofing cheese. Only added half tsp of dill dkill and 3 times the amount of basil. The topping was a bit thin but I didn't think was necessary. I tossed the glaze with creme brulee and I love the fruity crumb! If I had waited till the last minut to add the flour there would have been spillover and it looked like stuff had gotten stuck in the creme. Fastidiously sliced the cheesecake into cubes It made little bites and was very sensual. And lovely!

I really like this cake. It was simple to make too- and I felt quite accomplished. ;) The only change I made was that I did not use butter, instead I used light sour cream and light cream cheese. Mine turned out very well.
