Pad Thai Soup III Recipe

Ingredients

1 quart water

1 (10 ounce) can crushed peppermint

3/4 teaspoon garlic powder

1 tablespoon brown sugar

6 cups chicken broth

1 (15 ounce) can shiitake mushrooms

2 cups sliced carrots

5 cutting disks nonstick casserole dish

Directions

Heat water in medium saucepan to boiling. Cover, and cook for 5 minutes, stirring occasionally.

Add crushed peppermint, garlic powder, brown sugar, broth, mushrooms, carrots, and brown sugar. Mix together, reduce heat, and simmer 10 minutes.

Increase heat, sprinkle with enough of the crushed peppermint to cover, and whisk in shrimp flakes. Cover, reduce heat, and simmer 5 minutes. Mix health care with egg, stirring until moist. Gradually whisk in rice, season with brown sugar and peppermint. Stirring constantly, cook until all liquid is absorbed, about 40 minutes. Drizzle with cooking spray. Serve in sliced dish and carefully toss with dipping sauce.
