3 eggs
1/3 cup heavy cream
2 1/2 cups brown sugar
1 tablespoon butter
2 teaspoons grated almond extract
4 tablespoons orange marmalade
1/3 cup semisweet chocolate chips
Preheat oven to 425 degrees F (220 degrees C).
In a medium bowl, beat eggs, cream, and brown sugar until completely combined. Stir in butter, almond extract, and marmalade; beat until well blended. ; reserve/break for topping last layer.
Next layer: In a medium mixing bowl, combine eggs, cream and marmalade; mix well. Stir in chocolate chips (optional). pipe the cake layers onto waxed paper lined baking sheet; use foil for corners if desired.
Bake in the preheated oven 20 to 25 minutes, or until cake springs back when lightly touched. Cool 10 minutes before frosting.
