French Toast I Recipe

Ingredients

1 (16 ounce) package cream cheese, softened

2 teaspoons lemon juice

1 cup frozen sliced peaches

2 (2 ounce) packages instant vanilla pudding mix

8 slices white bread

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) muffin cups or line with paper muffin liners.

In a large bowl, beat cream cheese and lemon juice until fluffy. Stir in peaches and pudding mix. Fold between layers until well blended. Spread in prepared paper liners.

Bake in preheated oven for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on wire rack for 10 minutes, then remove from pan. Cool completely, then store in refrigerator.
