1 (4 ounce) fillet chicken
1 tablespoon lemon juice
1 fluid ounce vodka
3 fluid ounces cranberry juice
3 fluid ounces pineapple juice
2 fluid ounces orange juice
Place chicken fillet into a medium sieve with chicken's skin side up. In a large bowl mix lemon juice, vodka, juice of pineapple and orange juice. Cover and refrigerate 3 hours, marinating chicken for 1 to 2 hours.
Preheat grill to medium heat. Lightly oil grill.
Place chicken fillet on grill, grill touching up with tongs. Grill 15 minutes, or until chicken is no longer pink and juices run clear.
