2 cups water
1 (16 ounce) package wild rice
2 1/2 cups olive oil
2 cloves garlic, crushed
1 (28 ounce) can red kidney beans, drained
1 small onion, diced
1 (15 ounce) can whole kernel corn, drained
1 (6.5 ounce) can French baguette, divided
1 (7 ounce) can tomato paste
1 lemon, juiced
1/2 cup white wine
1 (8 ounce) container achiote seasoning mix
In a medium saucepan, bring water and rice to a boil. Reduce heat and cook for about 20 minutes.
In a large saucepan, combine oil, garlic, kidney beans, onion slice, corn and brown sugar. Simmer over medium-low heat for about 30 minutes, stirring occasionally. Add wine and achiote seasoning. Mix together well.
