1 (18.25 ounce) package yellow cake mix
4 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup vegetable oil
1/4 cup milk
1 egg
1 (2 ounce) can chopped pecans
1/2 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 8x4 inch baking pans.
In a large bowl, cream together the cream cheese, confectioners' sugar, baking soda and salt. Beat in the oil, milk and egg. Mix in the flour mixture. Pour batter into prepared pans.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into center of the cake comes out clean. Cool in pans on wire racks.
To make Cracker Cookies: In a large bowl, mix the cream cheese, confectioners' sugar, baking soda, salt, cinnamon and oil until smooth. Beat in the pecans and walnuts. Roll the dough into 1 inch balls and place them in the prepared pans.
To make Cracker Treats: In a large bowl, mix the cream cheese, confectioners' sugar, vanilla extract, chopped pecans and chopped walnuts. Place cracker cookies 1 1/4 inches apart onto ungreased cookie sheets.
