Coconut Cream Recipe

Ingredients

1 1/2 cups white sugar

1/2 cup vegetable oil

1 cup milk

1 teaspoon vanilla extract

4 eggs

2 cups butter, softened

4 ounces vanilla butter cookies

1 teaspoon orange extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, cream together the sugar and oil. Beat in the milk, one tablespoon at a time, until light and fluffy. Beat in the vanilla. Combine the eggs and butter, mixing just until incorporated. Combine the flour, baking powder, baking soda, salt, pumpkin, cinnamon and cardamom, stir into the creamed mixture. Drop by rounded spoonfuls onto the cookie sheet.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
