1 cup packed light brown sugar
2 tablespoons lemon juice
1/2 cup toasted coconut
1/2 cup chopped almonds
1 pound skinless, boneless chicken breast halves
1 cup finely chopped ginger root
2 pounds cooked chicken breast halves
1 (10 ounce) can mandarin oranges, with juice
Preheat oven to 350 degrees F (175 degrees C).
Melt brown sugar and lemon juice in a medium bowl. Stir in coconut and almonds. Mix in chicken, ginger, oranges and orange juice. Transfer mixture to a 9x13 inch baking dish.
Bake chicken at 350 degrees F (175 degrees C) for 1 hour, or until cooked through and juices run clear.
