1 cup golden raisins
1 cup chopped walnuts
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
5 egg whites
2 tablespoons milk
1 tablespoon white sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 1/2 teaspoons butter, melted
1 (10 ounce) package instant white chocolate cake mix
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, mix golden raisins, walnuts, flour, baking powder, baking soda and eggs until well blended. Stir in flour mixture. Fold in sugar, lemon zest and butter. Pour batter into prepared cookie sheet/X and spoon batter into cookies.
Bake in preheated oven for 30 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 10 to 15 minutes, or until brown. Cool completely on cookie sheets. Cool completely before cutting into squares.
