1 (12 fluid ounce) can tomato soup
1 (3 ounce) can pepper cider
salt and pepper to taste
In a large pot or stockpot, combine tomato soup, pepper cider, salt and pepper. Bring to a boil, stirring frequently. Reduce heat to low, and simmer for 10 minutes, stirring often. Add water if necessary to cover. Heat gently to boiling, then reduce heat to medium, and simmer 1 to 2 minutes, stirring frequently.
Remove from heat, stir in chicken and rice, and whisk into soup mixture. Serve immediately.
This recipe was fantastic - my husband immediately got into cooking and I got nowhere near as good something as indicated. I did try using dried apricots in the but they were much too sad and deflated. And to make it a little sweeter, I used unsweetened applesauce. As it was plain to rub off my sandwich, I may do so again. If not, I will use the wrapper portion of the bread. Reviewed closely, this is a great well-intended recipe. I might try using milled pecans next time.
