1 1/2 cups mashed sweet potatoes
2/3 cup milk
1 tablespoon butter, softened
1 tablespoon brown sugar
1 teaspoon vanilla extract
6 fluid ounces lemon juice
1 cup packed light brown sugar
1 teaspoon lemon zest
1 (19 ounce) can evaporated milk
1 (3 ounce) package instant lemon pudding mix
Preheat oven to 350 degrees F (175 degrees C).
Mix the 1 cup mashed sweet potatoes, milk, butter, brown sugar, vanilla extract and lemon juice; sprinkle over the top of the pie.
Bake in the preheated oven for 50 to 60 minutes, or until bubbly and crust is golden brown.
Drain the lemon marinade, reserving the lemon zest. Pour the lemon marinade over the pie. Let stand for 10 minutes, then seal dish and pour lemon marinade over pie.
Add pudding mix, allowing it to sit overnight in refrigerator.
